So, you know I’ve been trying to really make eve So, you know I’ve been trying to really make everything from scratch to avoid all the nasty unnecessary ingredients. 

We didn’t have any sweets, that floated my boat, and I thought brownies sounded so good.  These did not disappoint!

For the amount of time that I would’ve spent going to the store, I made these instead, and it probably took less time.

When you get a craving for a sweet treat try these yummy, gooey brownies.  Most likely you already have all the necessary ingredients on hand…

-10 TB butter melted 
-1 c sugar 
-2 eggs (I used Bob’s Red Mill Egg Replacer)
-2 tsp vanilla 
-1/2 c melted chocolate chips 
-3/4 c flour 
-1/4 c unsweetened cocoa powder 
-1/2 tsp salt 

-Preheat oven to 350 and line a 9x9 with parchment 
-Pour melted butter into bowl with sugar and whisk about 30 seconds 
-Add in eggs and vanilla and whisk for 1 minute 
-Whisk in melted chocolate and whisk until smooth 
-Stir in flour, cocoa powder and salt until just combined 
-Pour into pan 
-Bake 30 minutes and let cool in pan 30 minutes 
-Try not to eat the entire pan in one sitting 

Told you it was super easy and way better for you than buying a packaged variety.  Enjoy!
Do you know how easy it is to make your own dried Do you know how easy it is to make your own dried herbs?  I stumbled upon it by accident.

My fresh cilantro, that I’d had in the refrigerator, was getting ready to bite the dust.  So, rather than just chuck it in the garbage, I dehydrated it and then ground it up. 

Don’t have a dehydrator?  No problem…turn your oven on the lowest setting, remove the leaves from the stem, put them on a pan and pop them in the oven for a couple of hours until they have completely dried out. 

To grind them up you can either use a coffee grinder or your blender (which is what I did) and then store them in an extra spice jar.

This has so much more flavor than store bought and is way cheaper.
I don’t know what my deal is but I’ve been can I don’t know what my deal is but I’ve been canning up a storm.  Probably because I haven’t done it in awhile and I have a lot of empty jars.

If you like new potatoes, these are awesome!  Sometimes I just eat them out of the jar for lunch.  They are that good!  And the only ingredients are potatoes and water.  It doesn’t get much cleaner than that.

They’re super easy to make…peel and dice potatoes, put them in the jar, fill with water leaving an inch headspace, debubble, wipe rims with vinegar, finger tighten lids, pop them in the canner and cook 75 minutes (for pints) at 11psi (check altitude where you live).
I’ve really been on a kick lately to try and mak I’ve really been on a kick lately to try and make most things from scratch.  Why might you ask?  Because store bought products are filled with ingredients that just aren’t good for you…from seed oils to preservatives to ingredients you can’t even pronounce. 

We have gotten so far removed from how food is made that we think it’s abnormal to make it at home rather than buy it at the store.  However, when I make it at home, I control the ingredients used and let’s be honest, it tastes so much better!

Lots of people will say that they don’t have the time.  Really though, it’s actually pretty quick to whip these up.

Next time I will double the recipe, bake one batch and freeze the other, so all I have to do is pop them in the oven.

Put the ingredients for these on your grocery list and leave the store bought ones off…enjoy!

This recipe is for one batch of approximately 1-1/2 to 2 dozen depending upon size…
1/2 c butter softened 
1/2 c sugar 
1/2 c light brown sugar 
1 tsp vanilla 
1 large egg (I use Bob’s Red Mill Egg Replacer)
1-1/2 c all purpose flour 
1/2 tsp baking soda 
1/4 tsp baking powder 
1/2 tsp salt 
1 c chocolate chips 

-Preheat oven to 375
-Put flour and next 3 ingredients into a bowl 
-In a separate bowl whip butter and sugars
-Add in egg and vanilla and whip 
-Slowly add in flour mixture and mix only until combined 
-Add in chocolate chips and mix gently 
-Scoop dough out onto a parchment lined baking sheet (I use a small ice cream scoop)
-Bake 9-11 minutes only until they are a tiny bit browned 
-Take out and let cool on the pan 2 minutes or so before transferring them to a cooling rack 
-Try not to eat them all immediately 😜
