Fluffy Vegan Pancake Recipe
Who doesn’t love a big breakfast, especially on the weekend?! This fluffy vegan pancake recipe is a cinch to make and takes less than 30 minutes from start to finish. Not to mention, they are my husband’s favorite (and he’s not even vegan).

Pancakes are one of those quintessential breakfast foods that everyone loves.
Serve them with a side of vegan sausage (or even make a sausage/pancake sandwich with mustard) and you’re speaking my language! For a while, I gave these guys up because I only had recipes, and found mixes, that required eggs. I’m happy to report that these are free of eggs, dairy and even oil. I can’t wait for you to try them…they are so delicious!


These fluffy vegan pancakes are also so easy to make.
First, put the flour, sugar and baking powder into a bowl.


Then put the plant based milk, apple cider vinegar and vanilla into a measuring cup and stir.

Add the wet ingredients into the dry ones.

Stir until combined. Let sit for about 5 minutes.

Using a 1/3 measuring cup, ladle the batter onto a griddle or pan. Cook until the bottom is brown and then flip, doing the same to the other side.



Serve with vegan butter and syrup.

Dry Indgredients
- 1½ cups All purpose flour
- 2 TB Sugar
- 1½ TB Baking powder
- ¾ tsp Salt
Wet Ingredients
- 1½ cup Plant milk
- 1½ TB Apple cider vinegar
- 1½ tsp Vanilla
Add the wet ingredients to a measuring cup and stir
Add the dry ingredients to a bowl
Add the wet ingredients to the dry ingredients and stir until combined
Let set for about 5 minutes
Heat pan or griddle to medium to medium high heat
Using a ⅓ measuring cup, ladle pancake batter into pan and cook until brown and then flip doing the same on the other side
Keep cooking until you've used all the batter
Serve with vegan butter and syrup
This recipe makes about 17 – 4″ pancakes.
