Easy Vegan Cheese Sauce Recipe

When I went plant based, this was a tough one for me to do without. I tried so many different recipes but none even resembled any type of cheese I’d ever eaten. In fact, most were pretty gross. After much trial and error, I’ve finally come up with one that is delicious and actually multipurpose…it’s great for queso, nachos, pizza, mac and cheese, baked potatoes, the possibilities are endless. You’re definitely going to want to try it!

Keep in mind…
Now there is a disclaimer here…no vegan, plant based cheese is going to taste exactly like real cheese. It’s unfortunate but it’s true. However, with that being said, this is pretty darn good, it’s way better for you and no cows were harmed in the making of it.
What I’ve learned on my journey is that I didn’t necessarily miss the “actual cheese.” But rather, I felt like I was missing out on what I remember as being good. I’d see chips and queso and my mind would remember a taste that I liked (very, very much). But now, when I make this recipe, I don’t feel like I’m missing out on anything. P.S. your taste buds change the longer you’re plant based too. So now, if I take a bite of cheese pizza, it’s not the same as it once was. It’s too heavy, greasy and ends up hurting my stomach.

This easy vegan cheese sauce is organic (see my post here about the importance of organic products) and a cinch to make. Even non-vegans (like my hub) like it.
So how do you make this easy vegan cheese sauce recipe?
All you need is cashews, a carrot, potato, nutritional yeast, lemon juice, salt, garlic powder, turmeric, pepper and if you’d like, a chunk of jalapeno for heat.

First you will need to add the cashews, peeled, diced carrot and potato to a small pan, cover with water and boil for 10 minutes.

Drain and reserve one cup of the liquid.

Put this into a blender and add the remaining ingredients and blend on high speed until smooth (probably about 2-3 minutes), scraping down the sides every so often. It may take longer if you don’t have a high powered blender. Be sure to remove the plastic vent on the blender top and place a towel over, so the heat has a way to escape.


When it is blended you can use it immediately or store it in the refrigerator for up to 5 days.

- 1 medium carrot cut into small pieces (For a white cheese sauce omit the carrot)
- 1 medium potato cut into small pieces
- 1 cup reserved cooking liquid
- 3 TB nutritional yeast
- 1 tsp lemon juice
- 1 tsp salt
- 1/4 tsp pepper
- 1/4 tsp garlic powder
- 1/4 tsp tumeric (For a white cheese sauce omit the tumeric)
- 1 chunk jalapeno (optional)
Add the cashews, peeled carrot and potato to a small pan, cover with water and boil for 10 minutes.

Can use immediately or will last about 5 days in the refrigerator.
- This is a very versatile cheese sauce. You can use this as queso, the cheese sauce for macaroni and cheese, pour over potatoes, broccoli or cauliflower, the cheese for pizza, the cheese for eggplant parmesan or ziti…the possibilities are endless!
- If you want a white cheese sauce, just omit the carrot and turmeric.
