The holidays are a time of family, food and festivities. Even plant based vegans want to enjoy a Thanksgiving feast. And, I have the best vegan turkey recipe cooked in the air fryer, that will give you the taste and texture reminiscent of the real deal, but without all the hassle. Not to mention, no sweet gobblers will be hurt in the making of this amazing dinner.

So what’s the main ingredient of this vegan turkey?
Tofu! Here’s the other great thing…it only takes 13 minutes in the air fryer to cook. While everyone else is slaving away in the kitchen, you’ll be out and about enjoying the merriment.
How to prepare the tofu turkey
First start by pressing your tofu. Then, combine one “Not Chick’n” bouillon cube and 1/2 cup of water. I microwave it for a minute so I can get it to mix. Slice your tofu in half lengthwise and put it in a quart size ziplock. Pour the mixture over the tofu and marinate for 2 days (flipping every so often). Yes, that long. You really want that flavor to infuse the tofu.
When it’s cooking time, take the tofu out of the bag (reserving the liquid). Cut into thin pieces. I use an egg slicer which works wonderfully to get uniform slices. Then add the tofu to an air fryer being sure that they are spaced out (I do 2 batches) and cook on 380 for 13 minutes, flipping after 6-1/2 minutes. When you flip the tofu, baste the tofu with the reserved marinade. Repeat for the second batch. This can definitely be cooked in the oven or stovetop but I don’t have the exact time for those. The flavor is amazing and the texture reminds me of the white meat part of the turkey.

You can eat it with or without a gravy. I used the leftover marinade, added some vegetable broth until I had about 1 cup, made a flour/water slurry (1/4 cup water and 3 TB flour) and added to the broth whisking constantly until thickened. Salt/Pepper to taste.
Serve with stuffing and cranberry for a plentiful vegan meal. You definitely won’t feel like you’re giving up anything!

- 1 cube Not Chick'n bouillon
- ½ cup water
